Thai mango salad


This fresh and flavourful salad is made @panierdufermier produce. This salad is a good source antioxidants, fibre and heart healthy fats.


Ingredients (makes 2 portions)

1 firm mango

1 red pepper (finely cut)

1/4 cup chopped unsalted cashews

1 lime (juiced)

4 tablespoons Thai basil (finely chopped)

Avocado oil (drizzle)

Thai chili peppers (finely chopped and to taste, I used 2 in this recipe)

Ground pepper & salt (to taste)

Method

Peel the mango and cut it with a mandoline (6mm thickness). In a medium bowl, add the pepper, mango and chili pepper. Mix well, season to taste and drizzle with avocado oil and lime juice. Garnish with Thai basil and cashews. Enjoy!
