This seasonal recipe is simple as 1, 2, 3!
2 stalks of rhubarb, cut in diagonal pieces
2 cups of fresh strawberries, cut in halves
1 bunch of fresh mint, chopped
Evoo, balsamic paste and fresh ground pepper to taste.
First, cut the rhubarb in diagonal pieces. Add sugar, lemon juice and lemon zest. Let marinate for at least 30 minutes.
When ready to serve, add cut strawberries and chopped mint.
Finish with a drizzle of evoo, balsamic paste and pepper to taste. Enjoy!
