Spinach, feta and pine nut dip

This dip is delicious with raw veggies and crackers. It can also be used as a condiment for sandwiches. Yields 6 portions.


500 ml (2 cups) baby spinach

60 ml (¼ cup) ricotta cheese

60 ml (¼ cup) sour cream

60 g feta cheese

45 ml (3 tablespoons) pine nuts

15 ml (1 tablespoon) light mayonnaise

1.5 ml (⅓ teaspoon) garlic powder

3 chive stems

Pepper (pinch)


Chop the pine nuts using a food processor. Add the rest of the ingredients and process until smooth.
