This winter vegetable is versatile and delicious in many ways!
Extra-virgin olive oil (drizzle)
Chives (fresh or dried)
Cream, regular or vegan (drizzle)
Ground pepper and salt (pinch)
Maple syrup, optional (drizzle)
Preheat the oven to 400 F.
Rinse and pat dry the endives. Cut them in halves and place them in a baking dish. Drizzle evoo to coat the endives lightly and roast them in the oven for 25 minutes. When serving, drizzle more evoo and maple syrup. Season with pepper and salt.
Top them with chives and enjoy!
