These fresh from the market rainbow carrots caught my attention when I visited the Jean-Talon Market. This Mediterranean inspired recipe is loaded with antioxidants and flavour.
Extra-virgin olive oil
Salt and pepper ⠀
Wash carrots and pat dry. Drizzle with olive oil.
Season the carrots with all the spices.
Cook in the oven at 375 F for 25 minutes.
Slice them in half, add more turmeric, pepper and olive oil.
Sprinkle with fresh parsley and serve 😋 ⠀
