Radish carpaccio with microgreens 🌱

This delicate salad with fresh produce from Le Panier du Fermier is paired with garlic-infused oil and balsamic paste.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Serves 4 portions.⠀⠀⠀⠀⠀⠀⠀⠀⠀


1 bunch of radishes⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 cups of microgreens⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/4 cup extra-virgin olive oil (evoo)⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 cloves garlic, peeled⠀⠀⠀⠀⠀⠀⠀⠀⠀

Balsamic paste (drizzle)⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ground pepper and salt (to taste)⠀⠀⠀⠀⠀⠀⠀⠀⠀




Clean and pat dry the radishes. Slice thinly with a mandoline and arrange the radishes on plates. Top with microgreens, drizzle garlic-infused olive oil* and balsamic paste. Season to taste and enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Smash the garlic cloves. In a small pan, mix room temperature evoo with the cloves. Stir often and simmer for 5 minutes on medium/low heat. Remove the cloves and transfer the oil into a jar. Let it cool for a few minutes before serving.⠀⠀⠀⠀⠀⠀⠀⠀
