Silken tofu is a great way to add protein and a smooth texture to smoothies.
For extra protein, I added pecan flour and soy milk.
Yields 2 portions.
5 oz (150g) plain silken tofu
1 cup unsweetened soy milk (chilled)
1/4 cup natural pumpkin purée
3 tbsp maple syrup
1 tbsp pecan flour
1 tsp pumpkin spice mix
1/4 tsp vanilla extract
Add all the ingredients in a blender. Blend for a few seconds and enjoy!
