Omelet muffins with mini-peppers & onions

This practical recipe is made with delicious produce from @panierdufermier. It’s a source of protein that can be a snack or complement a meal.


Makes 12 muffins.

9 free-range eggs

3 tablespoons 1% milk

1/2 cup cheddar cheese

4 mini peppers or 1 regular pepper (finely chopped)

1/2 onion (finely chopped)

3 tablespoons chopped chives

Pepper and salt to taste


Preheat the oven at 350 F and add silicone liners to a muffin tin. Whip the eggs and milk with a fork. Add the rest of the ingredients.

Pour the mixture in the muffin tin. Cook for 30min. Let the omelets cool for a few minutes before serving. Enjoy!
