Leek and mushroom omelet muffins

This recipe is an easy snack or addition to any meal. Perfect for meal prepping!


Ingredients

Makes 12 muffins.


9 eggs

3 tablespoons 1% milk

1/2 cups cheddar cheese

1 leek, sliced

4 mushrooms, sliced

3 tablespoons chopped parsley

Extra-virgin olive oil

Pepper and salt to taste


Method

Preheat the oven at 350 F and add silicone liners to a muffin tin. Sautée at medium heat the slices of leek and mushrooms with a bit of oil. Whip the eggs and milk with a fork.


Add the rest of the ingredients.


Pour the mixture in the muffin tin. Cook for 30min. Let the omelets cool for a few minutes. Enjoy!
