Miso paste is a versatile ingredient that adds flavour and nutrients 🤩
Makes 12 skewers
900g ground turkey
1 1/4 cups breadcrumbs
1 bunch of green onions (chopped finely)
12 bamboo sticks (soaked in water)
4 tablespoons red miso
3 cloves of garlic (finely chopped)
3 tablespoons ginger (juiced or shredded)
3/4 cup Tamari sauce (low sodium)
1/2 cup mirin
2 tablespoons honey
Ground pepper (to taste)
Make the marinade by adding all the ingredients in a small saucepan. Bring to a boil and let simmer for 20 minutes. Let cool.
Mix the ground turkey with breadcrumbs, green onions and half the marinade. Make the skewers with the bamboo sticks.
Oil the grill and preheat at medium/high for 10 minutes. Grill the skewers halfway through (about 6 minutes). Start adding glaze at that point until they are fully cooked (about 12 minutes). Enjoy!
