Mango chicken nourish bowl with spicy dressing 🌶

Ingredients (makes 2 portions)

⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 cups romaine lettuce (chopped)

2 chicken breasts (boneless & skinless)

1 cup black beans (canned & rinsed)

1 mango (cut in small cubes)

1 avocado (sliced)

1 cucumber (sliced)

1 small red onion (sliced & soaked in ice water)

1 small bunch of fresh chives

1 lime (sliced)

Pepper & salt to taste

Dressing


1 lime (juiced)

2 tbsp honey

2 tbsp ginger juice

1 tbsp avocado oil

1 tbsp garlic powder

1 red chili pepper (seeded & finely chopped)

Pepper & salt to taste

Method


Drizzle avocado oil on the chicken breasts and season to taste. Grill on the BBQ or roast in the oven at 350F for 30 min. Meanwhile, make the dressing by adding all the ingredients to a blender. Mix well. Slice the cooked chicken and add all the ingredients to a bowl. Serve with the dressing and enjoy!
