This high protein salad is made with fresh @panierdufermier produce. It also contains a high amount of antioxidants.
3 cups shredded kale
1 cup diced red grapes
2 green onions (chopped thinly)
1/2 cup crumbled feta cheese
1/4 cup roasted sliced almonds
1 tablespoon extra-virgin olive oil
1 tablespoon dijon mustard
1 tablespoon apple cider vinegar
Ground pepper (to taste)
Salt (a pinch)
In a large bowl, add the olive oil and salt to the shredded kale. Massage the leaves for a few seconds and let rest for 5 minutes. Meanwhile, make an emulsion with the vinegar and mustard. Add the rest of the ingredients and vinaigrette. Finish with a drizzle of olive oil and enjoy!
