Cherry & strawberry crisp


This seasonal dessert is made with fresh berries from @panierdufermier. I’ve added pecan flour in the crumble mixture which gives it a nutty flavour and nutrient density.



Ingredients (For 6 to 8 portions)

1 cup cherries (pitted and cut in halves)

1 cup strawberries (stems removed)

1 cup unbleached flour

1/2 cup brown sugar

1/2 cup butter (cold and cubed)

1/4 cup pecan flour

2 tablespoons cornstarch

1 teaspoon vanilla extract

Method

Preheat the oven at 375 F and grease a square 8” glass dish. In a large bowl, mix the berries with half the sugar and the cornstarch and place in the baking dish.

Mix the dry ingredients well in another bowl. Add the vanilla extract and butter. Make the crumble with a pastry knife or your hands.

Top the filling with the crumble and bake for 35 minutes. Broil for 2 minutes, until golden. Let cool and enjoy!
