Silken tofu gives this oatmeal a nice texture and extra protein.
For 1 portion.
1 cup cooked plain oats (any kind)
1/4 cup milk (any type)
1 small ripe banana
3 tablespoons silken tofu
2 tablespoons chopped walnuts
Maple syrup (drizzle) Nutmeg (sprinkle)
Mash 1/2 the banana with a fork in a bowl. Add the tofu and mix well. Add the mixture to warm, already cooked oats. Mix well and serve.
Top the oatmeal with banana slices from the remaining banana, walnuts, maple syrup, and ground nutmeg. Enjoy!
