Zucchini bread overnight oats

This delicious and nutritious way to start your day is made with fresh zucchini from Le Panier du Fermier




Ingredients

(For 1 portion)


1⁄2 cup oats (I mixed steel cut and old fashioned)

1⁄2 cup original almond milk or any plant based milk

1⁄2 cup vanilla greek yogurt

1⁄2 cup grated zucchini

1 tbsp chopped pecans

1 tbsp pecan flour (homemade or store-bought)

1 tbsp golden raisins

1/2 tsp cinnamon

Maple syrup (optional)


Preparation


In a Mason jar, mix the oats with the milk, yogurt, cinnamon, pecan flour (see my story for a how-to) and half the zucchini. Close with the lid and leave the jar in the fridge overnight. Before eating, add the remaining zucchini, chopped pecans, raisins and add a drizzle maple syrup. Mix well and enjoy!
