This recipe is made with delicious products from @panierdufermier. This dish is comforting and rich in protein.
Makes 4-6 servings.
3 cups washed and dried spinach
3 cups of ricotta
3 cups tomato sauce
1/2 cup grated Parmigiano-Reggiano
1/2 cup grated mozzarella
Ground pepper and salt to taste
Preheat the oven to 375F. Cook the shells for half the time suggested. Drain and cool in cold water. Set aside.
In a large bowl, combine the rest of the ingredients. In a 9 x 12 pyrex dish, spread a little sauce evenly. Stuff the shells and place them side by side. Cover with the rest of the sauce and garnish with mozzarella and parmesan cheese to taste.
Cook for 25 minutes. Broil until golden and let cool for a few minutes. Enjoy!
