Salad in jars

These salads in jars are made with delicious @panierdufermier produce. They are a great source antioxidants and a practical #mealprepping recipe.


Makes 2 jars.

1 cup microgreens

1 cup blackberries

2 grilled chicken breast (sliced)

4 tablespoons pecan halves

1 cup cucumber (sliced)

1 1/2 cup cooked quinoa

2 tablespoons extra-virgin olive oil

Balsamic paste (to taste)

Fresh chives (chopped)

Ground pepper & salt to taste


Layer all the ingredients in large Mason jars starting with the dressing. Next: quinoa, chicken, cucumber, pecans, blackberries, chives and microgreens. Serve and enjoy!
