Edamame & mint spread

This protein-rich spread is made with fresh products from @panierdufermier. It also contains #isoflavones which are beneficial for #cardiometabolic health.

Ingredients (for 4 servings)

1 cup frozen, shelled edamame

3/4 cup fresh mint

1/4 cup tahini

2 cloves garlic

1 tablespoon avocado oil

1 lime (juice)

Ground pepper and salt (to taste)

1 bunch of chopped shallots (garnish)

A few mint leaves (garnish)


Steam the edamame for 5 minutes and let cool. Put all the ingredients in a food processor. Purée and add a little water to achieve a smooth consistency. Garnish with mint and green onions. Enjoy!
