This soup is so simple and refreshing.
1 whole cantaloupe
1 1/4 cup orange juice
1 lemon (juice and zest)
2 tablespoons fresh ginger (grated)
Honey to taste (optional)
Add fresh basil or mint for garnish
Cut the cantaloupe in chunks and put in a blender. Add 1/2 cup of orange juice. Liquify with blender. Add the rest of the ingredients and liquify again until desired consistency. Enjoy!
