Blackberry delights 🤍




This refreshing dessert is made with fresh and juicy blackberries from le Panier du Fermier. This recipe delivers a good amount of fibre, protein and yumminess 😋


Ingredients (makes 12)


3/4 cup pitted dates

1/4 cup pecan flour

1/4 cup crushed graham crackers (gluten free option - substitute graham crackers with pecan flour)

250g cream cheese

1/2 cup vanilla greek yogurt

1/2 cup coconut cream

1/2 cup blackberries + 12 for garnish

3 tablespoons maple syrup

Fresh mint (as garnish, optional)


Method


Mix well the dates, pecan flour and graham crackers in a food processor. Add 4 tbsp of the mixture in each silicone or paper cups.


For the filling, add the rest of the ingredients in the food processor and mix well. Add the 4 tbsp of filling in each cup. Garnish with blackberries and freeze overnight. Before serving, let the cups thaw for 15 minutes and garnish with mint leaves. Enjoy!
